Alkaki is a festive pastry: a wheat dough shaped into small ridged cakes, fried and then dipped in sugar syrup. It is offered at weddings, naming ceremonies and major celebrations.
Ingredients
- 500 g wheat flour
- 1 tsp dried yeast
- 50 g sugar for the dough
- About 25 cl lukewarm water
- Oil for frying
- For the syrup: 400 g sugar and 25 cl water
Method
- Mix the flour, yeast and sugar, then add the water and knead until you have a firm dough.
- Cover and leave to rest for 1 hour.
- Shape small oval cakes and mark them with ridges using a fork.
- Fry over medium heat until well golden, then drain.
- Prepare the syrup by boiling the sugar and water for 10 minutes, dip the hot alkaki in it and leave to dry.
