Sold morning and evening on street corners, kossaï are cowpea fritters fried in oil. They are eaten hot, plain or with chilli, often at breakfast with porridge.
Ingredients
- 500 g cowpea beans
- 1 onion
- 1 small fresh chilli (optional)
- 1 tsp salt
- Oil for frying
Method
- Soak the beans for 2 hours, then rub between your hands to remove the skins and rinse.
- Blend the beans with the onion and chilli, adding very little water, to obtain a thick paste.
- Season with salt and beat the paste vigorously for a few minutes to aerate it.
- Heat the oil and drop in spoonfuls of paste.
- Fry until the fritters are golden brown, drain on absorbent paper and serve hot.
