Fakou sauce is a green leaf sauce, simmered with meat, onion and soumbala. Served over white rice, it is a family dish very common in the west of the country.
Ingredients
- 500 g beef or mutton
- 200 g fakou leaves (fresh or dried)
- 2 onions
- 2 tbsp tomato paste
- 1 tbsp soumbala
- 10 cl oil
- 1 stock cube, chilli, salt
- 400 g rice
Method
- Cut the meat into pieces and brown in oil with the sliced onions.
- Add the tomato paste, soumbala, stock cube, chilli and cover with water; simmer for 30 minutes.
- Wash and chop the fakou leaves, then add to the sauce.
- Continue cooking over low heat for 20 to 30 minutes until the sauce thickens.
- Cook the rice separately and serve topped with the fakou sauce.
